Recently, I’ve been trying to eat more white meats and less red ones. Chicken meat is lean, low fat and high in protein & vitamins. These chicken and spinach meatballs were delicious and relatively healthy, too.
1 red onion
2 slices of bread (grated)
300g of spinach
500g of ground chicken
Preheat your oven to 450F.
In a large bowl, mix your ingredients with your hands and use an egg to bind. Add some oregano, garlic powder and black pepper for seasoning. Then, roll your mixture into balls. Place the balls onto a well-greased baking sheet.
Set the timer for 15 minutes, flip the balls & bake for another 15 minutes. Once the timer is up, check the chicken is cooked thoroughly using a thermometer (74F).
Rice and potatoes have always been my go-to side dishes so this couscous salad was fun to create and tasted amazing, too.
1 cup cucumber (diced)
1 red pepper (diced)
1 avocado (diced)
1/2 cup couscous
1/4 red onion (diced)
Dice your veggies. In a pan with oil and oregano, sauté your red onion and red pepper. Cook until soft. Add water to your couscous and bring it to a boil, then reduce heat and let simmer for a few moments. After, add your sautéed pepper & onion and your diced cucumber & avocado to the couscous & mix it together. Serve hot or chilled.
