Like any millennial, I love avocado toast. But having the same recipe over and over again can be boring. So, I have been thinking of some avo-creations to satisfy my avo-cravings. This one was avo-licious.
1 avocado (mashed)
1 vine tomato (sliced)
1/8 red onion (diced)
To begin, preheat your oven to 350 degrees. I like to bake my sliced vine tomato in the oven with oil and oregano. If you prefer your tomatoes raw, skip this step!
Next, combine your mashed avocado with the diced red onion. Leave your finished mix in the fridge for later.
After this, I boil my spinach on high in 1/2 cup of water. Once water reaches boiling point, reduce the heat to medium and let simmer for 3-4 minutes or until spinach is soft. Once ready, drain the spinach well. I press on the spinach with kitchen roll to remove excess moisture.
While your in the process of cooking your spinach, you can start making your eggs. Personally, I like my eggs over-hard or poached but they taste good either way.
Finally prepare your toast with your choice of bread. Load your avocado and red onion mix onto the toast, followed by your spinach, egg and vine tomato. Season with salt and pepper.
